Ask a first-time visitor what defines Siesta Key Village and you'll get the same three answers: the beach, the drum circle, and whichever bar had live music the night they wandered in. Ask a resident, and the answer shifts by the season. This summer, the interesting change is quieter than a new hotel or a redevelopment: it's a handful of chef-owners and one established local hospitality group reshaping what a quick meal looks like between beach mornings and sunset.

That's the through-line worth watching. The Village has long been a sit-down town after dark. The 2026 additions are pulling it in a different direction during the day.

The Village's new grab-and-go layer

Two small openings are worth walking to before the July crowds thicken.

Siesta Poke, 5204 Ocean Boulevard. The counter-service poke and açaí concept is the newest project from Chris Brown and Mike Granthon of Above the Bar Hospitality Group, the same operators behind Summer House Steak & Seafood, The Hub Baja Grill, and The Cottage.
